Kugelis Recipe
This is a Lithuanian staple
loved by Miss
Helma Zukas and all good Lithuanians.
It has many
variations but this one is one of the best.
5 pounds peeled white potatoes
1 can evaporated milk
1 lb. bacon chopped, with grease, fried with one onion
1 Tb salt
4 eggs
Grate potatoes (whir them in a food processor or blender with a little
of the egg for moisture, if you like).
Mix all ingredients. Bake in a greased oblong cake pan for 10 minuts at
400o and 2 hours at 350o until golden brown.
This is delicious slightly cooled, served in slices. Or chill, cut in
slices and fry. Pass the sour cream.
Not recommended for the faint of heart!
